Darkside is the signature gin in our range, inspired by the British seaside and maritime history of our area, and hand-crafted at our Distillery using coastal botanicals that include locally foraged sea beet.
The name Darkside is from a term given to the Wirral Peninsula, in the spirit of local good-natured rivalry, by day trippers from Liverpool who venture over to the ‘dark side’ of the River Mersey to visit quaint seaside towns and villages.
We produce Darkside using a traditional method of cold-compounding. As a result, nothing is distilled away and the spirit retains the full intense botanical flavour and aroma. This also lends Darkside a beautiful amber hue and full-bodied mouthfeel.
Darkside is the recipient of international accolades for quality. They include Bronze at the International Wine & Spirits Competition (IWSC) and at the San Francisco World Spirits Competition. The Gin Guide Awards selected Darkside as “Best English Compound Gin”. Gin Foundry describes the unique flavour profile of Darkside as “the salmon swimming against the tide and standing alone in a world of noise and chaos”. Difford’s Guide rank Darkside as “Excellent”, noting that it is “one of the most interesting and enjoyable cold-compounded gins we’ve tried. Dry and yet well-balanced and rounded.”
We infuse a delightfully pleasing mix of seaside botanicals to create Darkside. Red Clover Flowers lend sweet floral notes reminiscent of honey. Chickweed adds a peaty, grassy flavour. Freshly foraged sea beet adds herbaceous, savoury notes. Combined with juniper, and four other invaluable botanicals, this results in a warming, savoury, herbal flavour and a smooth, dry finish. An authentic taste of coastal Britain.
Signature serve: Neat or on the rocks.
G&T perfect serve: Fever-Tree Mediterranean Tonic with a sprig of thyme and wedge of orange to garnish.
For the more adventurous: Darkside Negroni (45ml Darkside Gin, 35ml sweet vermouth, 35ml Campari).
